Grandma Taylor's Potato Chocolate Cake!

This cake came down through Cheryl's great grandmother Rosea Palmanteer Taylor.

2 cups sugar
1/4 cup butter melted
4 eggs
1 cup of warm mashed potatoes
1 cup of milk
stir together
2 cups flour
2 heaping teaspoons of baking powder
1/2 cup of chocolate
1 teaspoon of salt
1 teaspoon of cinnamon
1/4 teaspoon of ground cloves

Mix with the above and gently fold in 1 cup of chopped and lightly floured walnuts.

Bake in a 400% oven for 15 minutes,  then reduce heat to 350 and bake for one hour.

*This is a wonderful cake for those with wheat allergies! So Delicious...

Baked Salmon with Rosemary

Ingredients

1 tablespoon of chopped fresh rosemary
3 cloves of minced garlic
5 tablespoons of olive oil
Salt and fresh ground pepper
Juice of one lemon and lemon wedges
12 ounce salmon fillet

Directions

Preheat the oven to 375 degrees F.

Spread the rosemary, salt and pepper and minced garlic on both sides of the salmon. Set the salmon into a roasting pan coated with olive oil. Sprinkle the remainder of the olive oil over the salmon. Bake in the oven for 20 minutes.

Use a fork to check see if the salmon is fully cooked. If the fork goes in easily and the meat makes little resistance, this means the salmon is done.

Sprinkle the salmon with lemon juice and serve with lemon wedges.
Kid Favorite Lunch Treat...

Veggie Roll w/Citrus Dip
You will need:

1 Tbsp. peanut oil
½ cup finely chopped sweet onion
½ tsp. chopped fresh garlic
2 ½ cups finely chopped Vegetable Medley
1 cup Sugar Snap Peas
½ cup chopped water chestnuts
1 Tbsp. Lite Soy Sauce
1 Tbsp. rice wine vinegar
1 tsp. sesame oil
Dipping sauce:

½ cup jarred pineapple
½ Valencia Orange, peeled and chopped with juices
½ cup Hoisin Sauce
8 - 8 inch spring roll wrappers, rice paper style

Heat peanut oil in large nonstick skillet.  Add onions, stir for 2 minutes.  Add garlic, chopped vegetable medley, sugar snap peas, water chestnuts, soy sauce and rice vinegar, continue stirring vegetables 3 more minutes.  Remove pan from heat.
Mix together pineapple in juice with chopped orange pieces in juice and hoisin sauce to make dipping sauce.
Fill a bowl with warm water.  Dip in one spring roll wrapper and allow to soak for 1 minute, until soft.  Remove from water and place on a clean board or plate.  Spoon 1/8 of vegetable mixture onto wrapper.  Fold in both sides and roll up.  Repeat until all rolls are complete.
Preparation Time: 20 minutes
Serves: 4



Here's a great Doggie Treat that anyone can make!

Healthy Apple Biscuits

2 C. whole wheat flour
1/2 C. unbleached flour
1/2 C. cornmeal
1 Apple chopped
1 egg-beaten
1/2 vegetable oil
1/3 cup water

Preheat oven to 350. Lightly grease your cookie sheet. Dust an area of your counter with flour for rolling dough.
Stir flours and the cornmeal in a large bowl. Add egg, apple, oil, and water, stir in till blended. Roll dough out to the depth of a cookie, cut out with doggie friendly designs (bones, hearts, circles).

Bake 35 minutes. Turn off oven. Let biscuits sit for one hour. Store in an airtight container or refrigerator plastic baggies.

Makes about 2 dozen.

Impossibly Easy Pumpkin Pie

Hate struggling over a rolling pin and dough that just won't roll? Try this recipe for yummy success!

1 can canned pumpkin (not pumpkin pie mix)
1/2 cup Bisquick mix
1/2 cup sugar (or Splenda)
1 cup fat free evaporated milk
1 Tablespoon of butter
1 1/2 teaspoons pumpkin pie spice
1 teaspoon of vanilla
2 eggs

Fat Free Whip Cream for topping

Heat oven to 350 degrees; grease 9-inch pie plate; stir all ingredients (except Whip Cream:) until blended. Pour into pie plate. Bake for 35-40 minutes (high altitudes may cook for 55 minutes) or until knife inserted in center of pie comes out clean. Cool for 30 minutes. Refrigerate about 3 hours until chilled. Now top with the Whip Cream and enjoy!

Store covered in refrigerator.
